taco potato

I had a few taco flavored beef but I ran out of taco shells so I boiled some potatoes and made a taco potato.
Here’s what you need:
1/2 K. beef
1 pack of taco seasoning (I use Mc Cormick)
1 onion (chopped)
1/2 K. of Potatoes
1/2 cup of sour cream
parsley for garnish
Here’s what to do:
1.) Wash potatoes and boil
2.) While waiting for the potatoes to boil, saute onions.
3.) Add beef and taco seasoning.
4.) When beef is cooked. Set aside.
5.) When Potatoes are cooked, cut in half, do not peel, and scoop potato in the middle.
6.) Place sauteed beef and a tablespoon of sour cream. Top with parsley.
